Random Dip

Having a lazy Sunday watching football, I wanted some dip...and I wanted to use a variety of things I had in the fridge. Voila! A spur-of-the-moment creation that was delicious!

1 C ricotta cheese
1/2 C sour cream
1 C frozen spinach, chopped and drained
1/4 C sundried red pepper, chopped
1 tomato, chopped
1 green onion, chopped
6 leaves fresh basil, chopped (approx 2 Tbsp)
1 clove garlic, minced
1/2 C mozarella cheese, grated
Combine all ingredients and top with grated mozarella. Pour into a 8' pan and bake uncovered for 35 minutes at 350'. Serve with crackers or baguette.
