Parmesan-crusted Pork Chops

I saw this recipe for pork chops on Jessica's blog. It looked good, but I was not expecting it to be AMAZING! It's so easy, and it was so delicious. Josh took his first bite, and actually said "wow" aloud.

2 pork chops
1 egg white
1/2 Cup bread crumbs
1/4 Cup fresh grated parmasan cheese

Heat skillet to medium high heat. Put the bread crumbs and the cheese each on its own side plate, and the egg white in a bowl. Dip both sides of each pork chop in the cheese, then in the egg white, then in the bread crumbs. Drizzle the hot pan with olive oil and cook pork chops until done - about 5 minutes per side.

We had it with almond maple green beans (which I blogged about the other day) and stuffed tomatoes. I don't have a set recipe for stuffed tomatoes - they are different everytime depending on what I have in the fridge. Today's have breadcrumbs, 'tomato guts', garlic, parmasan cheese, and fresh basil.
