Peppermint Bark Popcorn

 I took a picture of this delicious treat, but I can't find it...and it hasn't lasted around here long enough to take a second one! This might not sound like much, but this popcorn is SO good and SO addictive. I made several batches over Christmas to give to our neighbours and take to parties as hostess gifts, not to mention some for my own family's hand-over-fist consumption.

I originally saw this recipe last year and didn't get around to making it until now, but it will definitely make an appearance again next year!

8 C air-popped popcorn
8 oz white chocolate
6 candy canes, crushed (yields about 1/2 cup)
1 tsp peppermint extract
3/4 cup semi-sweet or dark chocolate chips


**I just pop my popcorn in the microwave in a paper bag. Just put 1/4 C kernels in a regular paper bag, fold over the top a couple of times, and cook for 1 1/2 minutes. Two bags like that yields the 8 cups needed for the recipe. I've tried to do a 1/2 cup of kernels for longer time, but always end up with some burned and some unpopped.**

Put popcorn in a very large mixing bowl. Chop the white chocolate coarsely, and melt according to package instructions.  When completely melted, add extract. Stir very quickly (it will likely get a little lumpy, so act fast) and pour over popcorn. Sprinkle crushed candy canes on top, and stir to evenly coat. Spread popcorn onto waxed paper.

Place chocolate chips in a microwave safe bowl and heat in 30 second intervals, stirring in between, until melted and smooth.  Drizzle over popcorn mixture.  Let mixture dry completely until all chocolate is hardened. (refridgerating can speed this process, if you like.) When chocolate is hardened, break popcorn into chunks.
