Chocolate Roll-Out Cookies

Once again, a great recipe from Katie at Good Things Catered. Oh, how I wish her blog were still in effect! Thank goodness I still have her old posts saved in my Google Reader.

3/4 C butter
3/4 C white sugar
1/4 C icing sugar
2 eggs
1 tsp vanilla
2 1/4 C flour
1/2 c. cocoa powder
1 tsp baking powder
1/2 tsp salt



Beat butter and sugars until light and fluffy. Add eggs one at a time and mix thoroughly after each addition. Add vanilla extract, and continue beating. Sift flour, cocoa powder baking powder and salt together. Add to mixture gradually, but be careful not to over mix.


Place dough onto a piece of plastic wrap and wrap tightly. Chill dough in fridge for at least 30 minutes or up to a week. Roll out dough to 1/2 inch thickness, and cut.  Place on making sheet and bake at 400' for about 8 minutes.

Cool completely before icing.
