Cranberry Oat Cookies

I found this recipe in this pregnancy cookbook, and I honestly wasn't expecting them to be as good as they are. They have a great flavour and texture, and come together really quickly. Next time, I think I'll add some orange and lemon zest for a little extra somethin'-somethin'...and by the look of our cookie jar, next time will be very soon!

7 Tblsp butter, softened
6 Tblsp white sugar
1/2 tsp vanilla
1 egg
1/2 C dried cranberries, chopped
1 1/4 C flour, sifted
1/2 C oatmeal

Blend butter and sugar until fluffy. Add vanilla and egg and mix well. Stir in cranberries. Add flour and oatmeal and stir until a smooth dough forms. Roll into balls, and press with a fork. Bake at 375` for 12 minutes or lightly golden brown. Allow to cool on pan. (Yields 24 2" cookies)
