Chocolate Banana Oatmeal

 Chocolate. Banana. Peanut Butter. This is breakfast taken to a whole new level of decadence...And still healthy, cheap, and quick! I spotted this recipe on Live Well 360, and made a variation of it for a special breakfast treat. The kids went bananas for it! Such a fun way to make a day seem extra special at the breakfast table. 

1 C rolled oats
2 C water (or milk)
1/4 tsp salt
1 banana, sliced
1 tsp vanilla extract
1 Tblsp cocoa
1/2 tsp cinnamon
1 Tblsp sugar (optional - I used a very ripe banana and omitted sugar)
Peanut butter for serving, if desired

In a pot over medium heat, combine oats, water, and salt. Bring to a boil. Add banana and reduce to a simmer. Stir regularly to allow banana to break down and thicken the oatmeal. Add vanilla, cocoa, cinnamon, and sugar (if using). Stir to incorporate. Cook oatmeal to desired consistency. Serve with a spoonful of peanut butter or chocolate ribbons, if desired.
