Cookies and Cream Cake

I found this recipe when looking for an idea for my brother's birthday cake, and I knew he'd love it! It is one of those super easy recipes that seems decadent and indulgent, but only takes a few minutes.

I did the glaze recommended in the original Kraft recipe, but I was really disappointed with it. A simple ganache would have looked and tasted far better, so I am including that change here for you.


1 8" prepared cake (Devil's food cake mix baked according to directions, or your favourite homemade chocolate cake)
1 pkg cream cheese, softened
1/2 cup sugar
2 C whipped dessert topping (like Cool Whip), thawed
12 sandwich cookies (like Oreo), coarsely chopped
1.5 squares unsweetened chocolate, chopped
1/4 C semi-sweet chocolate chips
1/2 C whipping cream  
Beat cream cheese and sugar until well blended. Gently stir in whipped topping, and fold in chopped cookies. Place one cake layer, top-side down, on serving plate. Spread evenly with cream cheese mixture. Cover with remaining cake layer, top-side up.
In a small pot, bring cream just barely to a boil. Remove from heat, and pour over chocolate. Stir continuously until chocolate is melted and mixture is smooth. Chill for 15 minutes before pouring over cake, working from the centre, and spreading to drip over the sides of chilled cake. Store in fridge for at least 30 minutes before serving to to set.
