St Patrick's Day Cupcakes

I originally saw the idea for multi-coloured cake here. I made a variety of colours for the cupcakes for Simon's birthday party, but the pattern was random. For St Patrick's Day, I tried to make stripes to represent the flag of Ireland. They didn't turn out exactly as I had hoped...but not too far off!

They certainly aren't a culinary wonder, since they are just a combination of white cake mix and gel food colouring...but they are so fun! And festive! Gel food colouring provides vibrant colour using only a small amount. For these colours, I simply dipped a butter knife into the jar of colour before stirring it into the cake mix. Simple! I ordered a variety of colours from Off The Beaten Path (along with some darling little cookie cutters), and I couldn't be more pleased with the products, prices, or speed of delivery.
