Shortbread Cookies

Christmas time is coming! And so is our new baby. In an attempt to combine Christmas preparations and nesting, I baked some shortbread cookies tonight to freeze until the holidays. This is my Nan's shortbread recipe, and the are my absolute favourite. To me, they are exactly how a shortbread should taste...simple and delicious with a cup of tea or a glass of egg nog!


1 C butter, softened
½ C icing sugar
2 C sifted flour

Cream butter and icing sugar. Add flour gradually and stir, eventually working with hands. Form into balls and place on a cookie sheet. Flatten with a cookie press, fork, or bottom of a glass. Bake at 350’ for 15 minutes or until just slightly browned at edges.
