Sweet Potato Crackers

My kids love, what they call, a "dry snack" before bed. It's pretty much just small cup with a variety of little bites inside: raisins, crackers, cereal, dried cranberries, pretzels, dried apricots, etc. I found the recipe for these cute little crackers via Pinterest, and they were a fun and healthy addition to "dry snack!"

1 1/2 C flour
2 1/2 tsp baking powder
1/2 tsp salt
3 Tblsp unsalted butter
1 C pureed sweet potato
1 tsp sugar
coarse salt

Combine flour, baking powder, and salt in a large bowl. Cut in butter with a pastry blender or two forks until it resembles coarse crumbs. Stir in the sweet potato puree until combined and comes together like a dough. Roll in to a ball. Divide in to four piece for easier rolling. On a well-floured surface, roll very thin. Use mini-cookie cutters to cut dough. Place on a silpat or parchment-lined baking sheet. Sprinkle with coarse salt. Bake at 350` for about 10 minutes, until bottoms are just slightly browned.

If you didn't care about the shape, you could always just slice in to squares with a pizza cutter. Or think outside the box if you don't have mini cookie cutters...maybe you could use the top of a pill bottle to cut small circles?
