Pumpkin Mini-Muffins

I've made Weelicious' sweet potato mini-muffins before, and we all love them. I had some leftover pumpkin from making my usual pumpkin chocolate chip cookies, so I figured I'd alter the Weelicious recipe to use it up. The results were delicious!

1 C flour
1 C oats
1/3 C brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 large eggs
3/4 C pumpkin puree
1/4 C apple sauce
1/2 C milk
1/4 C vegetable oil
1 tsp vanilla

Prehead oven to 350`. Combine flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. Whisk eggs, pumpkin, apple sauce, milk, oil, and vanilla together. Make a well in the center of the dry mix, and slowly add the wet ingredients.  Stir until just combined. Do not overmix. Spoon in to greased or lined mini muffin tins, and bake at 350` for 15 minutes.
