Mini German Pancakes

I found this recipe via Pinterest, and these fun little pancakes have become a new hit lunch in my house. I usually set up the counter with a variety of toppings, and then kids get to garnish their own. The favourite toppings are generally bananas, strawberries, peaches, and Nutella. The kids love watching these pancakes grow and puff out of the pan, and they delight in watching them fall once they come out of the oven.

1 C milk
6 eggs
1 C flour
1/2 tsp salt
1 tsp vanilla
1/4 cup butter, melted

Combine everything except the butter in a blender. Blend well. Mix in melted butter gradually and slowly until incorporated. Grease muffin tins well (I use silicone muffin liners instead) and distribute batter evenly between 24 tins  Bake at 400` for 5 minutes, or until puffy and golden on top. Serve as desired with fruit, syrup, etc


It's hard to get a shot of the little bowl-like tops of these pancakes, but trust me - it's the perfect size for some sliced bananas and a little Nutella!
