"Not Take Out" Sweet and Sour Pork

This is one of our new favourites, but I've been neglecting to post the recipe. It easily rivals our favourite Chinese take-out place...but I feel way better about eating it.

Sauce:
3/4 cup white sugar
1/3 cup white vinegar
2/3 cup water
1/4 cup soy sauce
1 Tblsp ketchup
1 Tblsp cornstarch

Combine all ingredients into a small pot. Boil, stirring constantly, until thickened. If making in advance, only cook until slightly thickened as it will thicken more as it sets.

Stirfry:
3-4 fast-fry porkchops, cut into small pieces (I should weight it for you sometime!)
1/2 cup dry bread crumbs
1 small onion, sliced
3 carrots, peeled and chopped
3 celery stalks, sliced

Drizzle about 1 Tbsp oil in a large pan. Toss bite-sized pieces of pork with bread crumbs, add to pan, and cook over medium heat. Once meat is cooked and exterior is crisp, remove meat from pan & set aside. Add your veggies. Saute until tender crisp. Add meat back into the pan, and mix it all together with the sauce . Great over plain or fried rice.
