Comfort Week: Food

I`m an Irish girl from the Maritimes: The love of potatoes is in my blood!

Baked, mashed, roasted, fried...
In soups, stews, or meat pies...
With butter, sour cream, or cheese...
...Potatoes are my comfort food and generally my starch of choice.

My guiltiest potato pleasure are garlic mashed potatoes (with the skins on, of course). Scrub new red (and ideally local) potatoes. Cut into 2-inch chunks, and boil in a pot of salted water until fork-tender. Mash potatoes with 1-2 cloves of minced garlic, a Tbsp or two of butter, and a dollop of sour cream. Enjoy with some salt and pepper...oh, and maybe a main course if you are choosy.

Mmmmmmmm...

I don`t have my own photo because, sadly, we didn`t have garlic mashed potatoes tonight. My menu plan and grocery shopping were already done before I signed up for Comfort Week and tonight`s dinner was vegetarian lasagna.

  3. Mmm, my dh makes a similar garlic smashed potatoes that we love. There's Irish in his blood too. ;)

  4. Yum, yum, yum! Adam's a huge mashed potato fan, and so is Phillip. He (Phillip) pretends to cook and serve "mashTAYtoes" with his stove. :)
