"Starbucks" Cranberry Bliss Bars

I mentioned this recipe when I posted  Cranberry White Chocolate Cookies a few days ago. I can't believe I haven't shared this recipe before, because these bars are amazing! My friend Laura shared this recipe with me several years ago, and people ask me for the recipe every single time I take them somewhere. Again, it's a case of a copycat recipe where I've never had the original...but surely Starbucks can't bake anything better than these!

1 C butter, softened
1 1/4 C brown sugar, packed
3 eggs
1 1/2 tsp vanilla
1 tsp ginger
1/4 tsp salt
1 1/2 C flour
3/4 C dried cranberries
3/4 C white chocolate chips

1/2 C cream cheese, softened
3 C icing sugar
4 tsp lemon juice
1/2 tsp vanilla

Beat butter and brown sugar until smooth. Add eggs, vanilla, ginger, and salt. Beat well. Add flour gradually, and mix until smooth. Fold in dried cranberries and white chocolate. Spread into a greased 9x13 pan, smoothing the top with your spatula. Bake at 350' for 35 to 40 minutes or until golden around the edges. Cool completely before frosting.

Beat cream cheese until soft and smooth. Add vanilla and lemon juice, and mix to combine. Add icing sugar gradually,  beating well and scraping down the sides of the bowl regularly until smooth.


These are the kind of sweets that I need to bake to take elsewhere, because I have NO willpower when they are in the house. It's only 6am and the pan is already calling to me from the kitchen!
