Another recipe found via Pinterest! These potatoes were crispy and yummy, albeit a bit salty. I'd leave out the teaspoon of salt next time, since the mixed seasoning would contain some anyway.
3 russet potatoes, scrubbed but unpeeled3 Tbsp olive oil
1 Tbsp Italian Seasoning (I used Epicure's Classic Vinaigrette seasoning)
1 tsp salt (Again, I'd leave this out next time)
4 Tbsp Parmesan cheese
Slice potatoes into 1/4 inch disks. Toss potatoes with olive oil and seasoning to coat. Place in a single layer on a foil-lined baking sheet. Bake at 450` for 15 -20 minutes, or until lightly brown. Top with Parmesan cheese, and bake an additional 5 minutes.
