This was a super easy and quick supper that tasted great. It's really just a "dump and cook" kind of thing, so I'm only posting it as an endorsement for keeping a few staples in the fridge/freezer.
2 cups fresh tortellini (I used this one...MMmmmmmm!)
2 cups pasta sauce (I froze some extra last time I made it)
1 cup ricotta cheese
1/4 cup parmesan cheese
1 tsp basil
1/2 tsp parsley
Combine all ingredients into a casserole dish. Bake at 350' for 30 minutes or until bubbly.
