Garlic Scape Creamy Salad Dressing

This recipe is slightly adapted from Fox in the Kitchen, and is a great way to use fresh garlic scapes. I have used garlic scapes in soups, sauces, stirfries, and curries, but I think this was my first time using them raw. This salad dressing is very garlicy, but so so good! 

2 garlic scapes, chopped
1/4 C plain greek yogurt
1/4 C oil
1 Tblsp lemon juice
1 tsp prepared mustard
1 tsp apple cider vinegar
1 tsp honey
1/2 tsp pepper
1/4 tsp salt

Combine all ingredients in food processor and process until smooth. Store with a tight lid in the refrigerator.


We enjoyed it on a salad with leaf lettuce, grape tomatoes, sweet mini peppers, grilled chicken, and multigrain croutons. Mmmmm!

    1. Ha! I know...oodles of Dave's garlic scapes and giant onions. ;) I just use them any place I would use regular garlic: pasta sauce, soup base, etc. Maybe I'll come up with a recipe to make a garlic butter with it?
