Apple Dapple Coffee Cake

I originally saw a recipe for Apple Dapple here, and might have drooled a little over the photo showing the glaze being pourd on the cake. I am a brown sugar fiend afterall.

Here's my version, with a few modifications to suit our allergies, tastes, and needs (ie: I shouldn't be left alone with a cake that big!)

1 1/2 cups flour
1/2 tsp salt
1/2 tsp soda
1/3 cup oil
1/4 cup plain yogurt
1 egg
1 cup brown sugar
1/4 cup toffee bits
1 1/2 cups apple, peeled and chopped

Sift flour, salt, and soda to combine. Set aside. Beat oil, yogurt, egg, and sugar until smooth. Beat in dry ingredients until evenly mixed. Stir in apple and toffee bits. Spread into greased 8-inch cake pan. Bake at 350' for 30 minutes or until cake tests done. Loosen from sides of pan with a knife and allow cake to rest while making the glaze.

1/2 cup brown sugar
1/8 cup milk
1/8 cup margarine

Combine all ingredients in a small pot over medium heat. Allow to boil until slightly thickened.

With a spatula, loosen the cake form the pan (I know this can be tricky!). Put a plate or cooling rack on the top of the pan, and invert pan to allow the cake to fall onto the plate/cooling rack (cake is upside-down). Place a second plate on top of the first, and allow the cake to fall onto it (cake is now right-side-up on the 2nd plate. Pour glaze over cake, starting at the centre and gradually working towards the edges, spreading it out evenly as you go.

Maybe you have another trick for getting warm cakes out if the pan and onto a serving dish? I'd love to hear about it! This trick has always worked for me (knock on wood), but I make no guarantees! :)

The glaze is divine. Trust me. I licked the spatula after making it, and my plate after my first slice!
