Café Brownie Cheesecake

Okay, so I made up the name...but it's catchy, right?

I started by putting chocolate cookies (about half the package of this kind) and instant coffee (about 3 tsp) in the food processor to make my crumbs. Mix the crumbs with about 4-5 Tblsp of melted butter, press into a 10" springform pan, and baked at 350' for about 12 minutes.

For the cake, I started with a recipe I've used before for a cheesecake with espresso. Fold brownies (cut into about 1/3 inch squares) into the base, reserving a few to press into the top. Bake at 325' for about 1 hour. Turn off oven, open door, and allow cake to finish cooking in the cooling oven. Remove after a couple hours (when the pan can easily be handled without oven mitts). Cover loosely with plastic wrap and store in the fridge.

This is the first time I've made a cheesecake with an "add-in", and I'm really pleased with how it turned out. I'm already dreaming up other combinations!
