Apple Blondies

Still trying to use all those apples we picked...


I found this recipe on Kayte's blog and thought it looked great. On her suggestion, I ditched the frosting from the original recipe. They are so chewy and deliious! You would think that I would be sick of apples by now, but I'm not at all! Seasonal things just make me so excited. Bring on the apples, pumpkins, sweet potatoes, and squash!


2/3 cup butter, softened
2 cups packed brown sugar
2 eggs
1 tsp vanilla
2 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup chopped peeled apples
1 1/2 tsp cinnamon

In a large bowl, using an electric mixer on medium speed, beat butter, brown sugar, eggs and vanilla until thick and smooth. Combine flour, baking powder and salt. Add to butter mixture on low speed, mixing until blended. Combine apples & cinnamon, then add to mixture. Spread evenly in greased 9x13 pan. Bake at 350 degrees until set and golden, about 30 minutes. Let cool completely in pan on rack.


The picture is really yellow for some reason...
