Caramel Apple Pie

I had some apples leftover at the end of the week and figured I'd make a pie to take to Sunday supper at my parents' house. I felt like something different than regular apple pie, so I decided to spruce it up a little. I looked at a few apple pie variationsonline, and then made up this one.

Crust:
1 1/2 cups flour
2 tsp white sugar
1 tsp salt
1/2 cup oil
2 Tbsp milk


With a fork, mix all ingredients in the pie plate and press into sides. Pierce withfork several times to allow steam to escape.


Filling:
6 small apples, peeled and chopped
1Tbsp lemon juice
1 tsp cinnamon
1/2 tsp nutmeg
1 Tbsp brown sugar
12 caramel candies, unwrapped and quartered

Put chopped apples into bowl, drizzle with lemon juice and stir to combine. Add cinnamon, nutmeg, and brown sugar, stirring until apples are well-coated. Mix in caramels until evenly distributed. Pour into prepared crust.

Streusel:
1/8 cup butter, chilled and chopped
1 Tbsp brown sugar
1/2 cup oatmeal
1/2 cup Skor bits
1/4 cup walnut pieces


Mix all ingredients until butter pieces are evently distributed. Sprinkle over topping.


Bake in a 375` oven for 45-50 minutes.

It turned out quite well! Next time, though, I think I'd melt the caramels and stir them in with the apples instead of starting them out from solid. I think it would distribute the sweetness a little more evenly. We had it with vanilla ice cream.
