Twice Baked Potatoes

Last night's side: Twice Baked Potatoes. Mmmmm! I didn't follow a particular recipe, but these are the measurements I used to make three potatoes:

3 Potatoes
3 Tblsp Sour Cream
2 Tblsp milk
2 green onions, diced
1 clove of garlic, minced
1/3 cup cheddar cheese, grated
Salt
Pepper

Bake potatoes. Cut it half, and scoop out the inside, leaving as little potato as possible next to the skin. Reserve all that scooped potato and allow to cool. Once potato is cooled, beat in remaining ingredients until smooth. Spoon mixture back into each skin shell, first pushing down and levelling off, then mounding on top. Place filled potatoes on a foil lined baking sheet that has been spritzed with non-stick spray. Bake at 350' for 20 minutes.

We had it with some simple breaded and baked chicken - delish!
